The School of Artisan Food, ICSA Academy, Nottinghamshire. A world-class, not-for-profit organisation dedicated to teaching skills in artisan food production.

The School is based on the beautiful Welbeck Country Estate in the heart of Sherwood Forest in Nottinghamshire. It is unique to the UK food industry; a hidden gem of specialist skills and knowledge, state-of-the-art facilities, and a heartfelt belief in the power of healthy, sustainable food.

Founded in 2009, its founder had started a bakery in the courtyard that was to eventually house the school, but it proved very hard to find skilled bakers to make the long-fermentation bread that she was determined to sell. The school was thus created from a wish not to loose traditional artisan food skills, to teach a new generation of artisan food producers, to promote alternatives to highly processed food, and to think about all aspects of good food.

Whether you decide to enrol on their Advanced Diploma in Baking or FDSc in Artisan Food production, or you decide to participate in one of their many short courses, you’ll experience a warm welcome and be among friends.

They offer bursaries and subsidies to make artisan food accessible to as many people as possible; working closely with local schools, colleges, voluntary organisations and social enterprises; offering practical routes into employment in the artisan food sector; preserving traditional methods of food production which might otherwise be lost.

The School of Artisan Food is accredited by ICSA for their professional and consistent teaching standards and extensive facilities. Selected cookery courses are also accredited by the FDQ, who deliver ‘Food and Drink Qualifications’ and apprenticeships recognised by the the food industry. The courses adopt a non-regulated courses based on their strict criteria, leading to professional vocational qualifications and apprenticeships.

Courses cover a wide range of subjects, from hands-on making to the business of creating and running a successful artisan food enterprise, with many options in between. Subjects include baking, patisserie, cheesemaking, butchery, charcuterie, pie making, brewing, preserves and pickling, foraging, fermenting, and ice-cream making, business start-up, micro-bakery, and sessions on therapeutic baking.

Celebrating 25 years if inspirational cookery courses, Ashburton in the heart of Devon is one of the UK’s top, private cookery schools.
