Chef’s Tables, barbeque food and small-plate menus are all predicted to be the new dining trends next year, according to Michelin Guide editor Rebecca Burr.  The latest list highlights new stars ‘Barrafina’ and ‘Kitchen Table.’

Bubbledogs says  “There will be more places like Barrafina, combining tapas and small plates with a seriously-run approach.”

Rebecca also highlighted what she called a “new direction” for UK dining with a central ethos of British food and simple produce. ICSA President Stella West-Harling says ” Here in the West Country I cannot think of any reasonable restaurant that doesn’t use great local produce. This has been the case for the past ten years. ICSA has highlighted the importance of local, seasonal, sustainable ingredients as a vital part of the British Cookery Schools’ training for our students. Whether it is a half-day or a full professional training, we need to highlight provenance.”
